Blueberry Coconut Smoothie Recipe The last few months have been a fun exploration into the land of sugar-free smoothies. I’m usually just a juicer because it’s easy to make a sugar-free green juice, and my main mission is to make sure that I pack my body with as many raw plant-based nutrients as possible. But, I’ve found, that there are definitely times when I want something mildly sweet, yet sugar-free.

So, how do you enjoy a mildly sweet smoothie without adding sugar? Well, it comes down to taking advantage of one Medjool date and alcohol-free vanilla liquid stevia.

Liquid stevia is best used in recipes that have a fat base. So, it’s great to use in smoothies with a coconut milk base or for sugar-free chocolate almond spread or sugar-free hot chocolate. So, think chocolate smoothie, coconut smoothie, or carob smoothie. All of these smoothies end up tasting like a fabulous milkshake without the dairy or sugar. Great, right? Blueberry Coconut Smoothie Recipe Today’s recipe is inspired by the hot, Toronto days that August is all about. The colour of this smoothie is reminiscent of my Morning Glory flowers blooming in my front garden — the one’s that return each and every year, no matter what.

Sugar-Free Blueberry Coconut Smoothie

A mildly sweet sugar-free smoothie packed with antioxidant love from blueberries. This smoothie is extra thick, just like a milkshake.
Serves: 1

  • 1 cup of blueberries
  • 1/2 cup of full fat coconut milk
  • 1 Medjool date
  • pinch of salt
  • 4 drops of vanilla liquid stevia
  • 1/4 avocado
  • 4 ice cubes

  1. Place all ingredients into a high speed blender and blend for 2 minutes.
  2. You may need a Vitamix blender with a tamper (this is a thick smoothie!)
  3. If it just isn’t think enough, add 1 more ice cube.

      Hi Romina, I like to use Thai Kitchen Coconut Milk. Yes, it comes in a can. I like that it’s very, very thick. Now…that being said, I have used other coconut milks, from cans, successfully. For an extra rich treat, you can also use Coconut Cream, which comes in tetra packs (in the refrigerator section of select grocery stores.)
